Can I submit photocopies of bank statements or do they all have to be originals? I assume that the P60 can be a photo copy as only one P60 ever exists. If I send that to the court then I don't have it for my own purposes.

Yes you only need to give the court and other party a photocopy of your statements, but you need to keep them handy incase the other side want to look at them.
